To start making this instant pot whole chicken recipe you’ll need to get a small bowl and add the pepper, salt, paprika, thyme, basil and chili powder to combine well. Next, you’ll need to prepare the chicken by carefully lifting the skin and taking it off the breasts using your hands.
Using the olive oil and half of the seasoning you prepared in the bowl, rub the chicken till all of it is covered and ready to bake. Once done, add the onion, garlic cloves and lemon in the cavity of the chicken and tie the legs using a twine.
Set your Instant Pot to sauté mode on high and heat up one tablespoon of olive oil. Once well heat up, add the chicken in the pot with the breasts facing downwards and sear it for about 7 minutes.
After the 7 minutes have passed, turn over the chicken and sear for another 6 minutes on the other side so it’s cooked evenly. Take out the chicken and the trivet from your instant pot and set the chicken on it, then place both back in the inner pot.
Add the chicken broth, cover and seal the lid and set the instant pot to manual high pressure and the timer to 24 minutes. Let the instant pot release pressure naturally which may take up to 15 minutes.
When the time has passed (24 + 15 minutes) use the quick pressure release to get rid of the remaining pressure, open the lid and take out to chicken, transferring it to a plate and getting it ready for serving.
