  • 3 cup broccoli chopped
  • ½ cup carrot
  • ¼ tbsp nutmeg

How to Prepare Soup Recipe

First Sauté onion in butter.

Melted butter and flour should be cooked with a whisk over medium heat for 3 to 5 minutes, or until the pan turns a definite golden brown hue.

Add the chicken stock gradually and whisk one more to blend. On medium heat, cover the contents and simmer them for 20 minutes while stirring regularly.

Broccoli, carrots, and sautéed onions should all be added to the stew. Add the milk and half-and-half, then stir. Cook 20 to 25 minutes, covered, on low heat; do not bring to a boil.

The milk could curdle as a result of this.

Add nutmeg, salt, and pepper. Reminder: Puréeing half of your soup in a blender or with a handheld immersion blender is optional and not necessary. Continue to boil the soup on low heat while gradually stirring in a handful of shredded cheese at a time to prevent clumping. Remove from fire as soon as all of the cheese has melted in and serve right away. Serve the dish in a breadbowl or with crusty bread.
