Low Carb Breakfast Without Eggs
- large chopped green bell pepper
- large chopped red bell pepper
- 1½ tbsp olive oil
- 1½ tbsp Dried thyme
- ½ tbsp Smoked paprika
- 2 tbsp Crushed garlic
- ½ cup Chopped onion
- ½ tbsp Ground, coarse black pepper
- 10 Oz Cooked and chopped breakfast sausage links
- 1 Cup Grated cheddar cheese
- 1 tbsp Lemon juice
- Preheat the oven to 180C/350F.
1.Preheat the oven to 180C/350F.
2.Grease a medium-sized baking or casserole dish
3.Add peppers to the dish and sprinkle with thyme and paprika
4.In the meantime, heat a non-stick pan and sparsely grease it with some olive oil. Fry the garlic and onion until browned and soft. Mix in the cooked breakfast sausage and allow them to gather flavor.
5.After about 20 minutes of the peppers cooking, remove them from the oven and mix in the sausage stew
6.Sprinkle the cheddar cheese evenly on top and place the dish back in the oven, with the oven set to roast
7.Leave the bake in the oven for a further 2 – 5 minutes, or until all the cheese is melted
8.Remove from oven and enjoy while piping hot!
