This dish is quite nice because it combines earthy peanut elements, citrus and umami. - 6 medium (~25 ounces) boneless skinless
- 6 tablespoons unsweetened smooth peanut
- ¼ cup chicken stock
- 2 tablespoons soy sauce
- 1 tablespoon orange juice
- 1 tablespoon lemon juice
- ½ teaspoon sesame oil
- 2 teaspoons chili paste
- ¼ teaspoon coriander
- ¼ teaspoon cayenne pepper
- Optional: 1 tablespoon erythritol/stevia blend
- Salt and pepper to taste
First thing you’ll need to start executing the recipe is to get a bowl and put half a cup of peanut butter in it along with quarter cup chicken stock, 2 tablespoons soy sauce, 1 tablespoon orange juice, rice vinegar, half teaspoon sesame oil, 2 teaspoons chili garlic paste, quarter teaspoon coriander, quarter teaspoon cayenne pepper and mix them all together until it’s thick and creamy.
Get the boneless and skinless chicken thighs and cut them into cubes then put them to fry on high heat with some olive oil.
