INGREDIENTS

Crust

 

  • 1 cup almond flour
  • ¼ cup coconut flour
  • ¼ cup erythritol
  • ½ tablespoon lemon zest, see note
  • 3 tablespoons butter, softenedFilling
  • ¾ cup erythritol
  • 1 tablespoon butter, softened
  • ½ cup almond milk
  • 1 cup lemon juice
  • ½ tablespoon lemon zest, see note*
  • 5 large eggs, beatenTopping
  • ¾ cup toasted coconut chips, unsweetened
  • 2 tablespoons almond flour
  • ½ tablespoon butter

First thing you’ll need to start executing the recipe is to preheat the oven to 350F and grease an 8×8 dish. Get a bowl and put 1 cup of almond flour, quarter cup coconut flour, quarter cup erythritol, half a tablespoon lemon zest and mix it all together. Add the softened butter into the mix and mix again till the butter is fully incorporated.

Place this mixture into the baking dish and press it in so it’s equal on all sides and put it to bake for 15 minutes.
Meanwhile grab a pan and put 1 tablespoon of butter, half a cup of almond milk, half tablespoon lemon zest, and 3 quarters of a cup erythritol and whisk them together.

When they are mixed start adding 5 large beaten eggs into the mixture while whisking it and place the mixture on top of the crust evenly, then put it back in the oven to bake for another 15 minutes.

Take a food processor and put 3 quarters of a cup unsweetened and toasted coconut chips, half a tablespoon of butter and 2 tablespoons of almond flour and blend them together.
