When it comes to keto diet meal prep it’s often boring to prepare the same thing every time and let’s face it, it’s kind of boring so we decided to bring to you a nice dinner recipe that will mix up your dinner pallet bringing Korean BBQ flavors which are sweet and spicy at the same time but absolutely delicious. Let’s check out the ingredients the preparation for this recipe.
Meat & Peppers
- 1 pound ground beef
- 2 medium bell Peppers, sliced in half
- 2 stalks green onion, sliced thin
- 2 teaspoons minced garlic
- 2 teaspoons minced ginger
- Salt and pepper to taste
- 8 large eggsKorean BBQ Sauce
- 1/3 cup sugar-free apricot preserves, like
- 1 ½ tablespoons rice wine vinegar
- 1 tablespoon Reduced Sugar Ketchup
- 1 tablespoon chili paste
- 1 tablespoon soy sauce (or coconut aminos)
First thing you’ll need to start executing the recipe is to get a frying pan and cook the ground beef on medium to high heat till it’s browned.
Next, add 2 teaspoons of minced garlic, 2 teaspoons of minced ginger and cook it some more while mixing it together.
Push the beef to one side of the pan and add sliced green onions on the other side and let them fry.
Take another pan and add 1/3 cup sugar free apricot preserves, 1 ½ tablespoon rice wine vinegar, 1 tablespoon reduced sugar ketchup, 1 tablespoon chili paste, 1 tablespoon soy sauce and bring it to a boil while you stir.
Reduce it until it’s slightly thickened then add half of the sauce to the ground beef mixture and mix it all together.
Stuff the bell peppers with the ground beef and put them to bake at 350F for about 15 minutes.
Once they are done brush them with extra sauce and serve.
