First thing you’ll need to start executing the recipe is to boil some water and as soon as the water boils put the 2 large eggs in and cook them for about 12 minutes.
Remove the eggs and let them cool off. Take out a frying pan and put 2 tablespoons of butter in it and let it melt. While the butter melts peel the eggs and mash them together into a bowl.
Get a mixing bowl and add one egg yolk in it with 2 teaspoons of lemon juice, quarter teaspoon of Dijon mustard and some salt and whisk it together.
Create a double boiler and put the mixture of the egg yolk to boil while whisking it till it starts to thicken and then drizzle in two tablespoons of melted but not hot butter. Let the sauce cool off before moving to the next step.
Add 2 ounces of salmon to the mashed eggs along with 1 tablespoon of chopped chives and mix with the hollandaise sauce then split the mixture into 4 pieces and roll those pieces into balls.
Roll the balls you created through the crispy salmon and chives and they’re ready to be served.
